Zach's Crispy Spicy Potatoes

ingredients


  • Whole bunch of potatoes (figure about 1.5 potatoes per person)
  • Oil (olive oil is best, but anything works)
  • Salt
  • Pepper
  • Paprika
  • Cayenne Pepper
  • Thyme
prepare

  • Preheat oven to 475F
  • Boil one large pot of water
  • Clean large batch of potatoes

  • Boil whole potatoes for approximately 20min, or until tender enough to easily stab with a fork
  • Drain potatoes and let cool
  • Cube or cut potatoes into wedges
  • Score the surfaces of the potatoes with fork, producing greater surface area, hence crispyness
  • Place cubes in large mixing bowl and season with salt, pepper, and spices
  • Cover the bottom of large hotel tray with oil and place in oven for a few minutes to heat
  • Carefully recover tray from oven
  • Spread out potatoes on hot tray(s) in one layer and place in oven
  • Let bake for 40-60min, turn potatoes occasionally
